Apple Berry Crumble

With the days and nights getting warmer, it’s the perfect time to swap out heavy desserts for something a little lighter. This Apple Berry Crumble is a quick and wholesome treat that you can enjoy any time of day.  Whether it’s a cosy dessert with a scoop of ice cream or even breakfast with a spoonful of yoghurt.

What makes this crumble so special is its nut and seed topping.  A twist on the classic version that skips oats and flour entirely, making it naturally gluten free and full of texture. The mix of warm baked apples, juicy berries and crunchy topping is just heavenly.

It’s one of those easy recipes that you can make your own.  Swap in whatever fruit is in season, serve it with a scoop of ice cream, a dollop of yoghurt or just on its own.

Ingredients

  • 2-3 apples (sliced into 1cm pieces)
  • 1-2 pears (sliced into 1cm pieces)
  • 4-5 strawberries (sliced into quarters)
  • ¼ cup raspberries
  • ¼ cup blueberries
  • 1 teaspoon cinnamon or Tweed Reel Foods Cookie & Crumble Spice
  • 1 tablespoon raw sugar/coconut sugar/maple syrup
  • ¼ cup almond flakes/slivered almonds
  • ¼ cup sunflower seeds
  • ¼ cup pepitas
  • ¼ cup coconut flakes

Instructions

  1. Preheat your oven 160ºC and grease an ovenproof baking dish (mine was 20cm x 14cm)
  2. Layer the apples and pears on the bottom of the baking dish.
  3. Sprinkle cinnamon and sugar/maple syrup over the apples and pears.
  4. Add the raspberries, strawberries and blueberries. These can be placed randomly on top.
  5. Sprinkle almond flakes, sunflower seeds, pepitas and coconut flakes over the top of the fruit. Use as much or as little as you like.
  6. Place in the oven for 20-25 minutes or until golden and the apples are soft.
  7. Serve with ice cream, yoghurt, custard or whipped cream whatever takes your fancy!

Notes

🍏This dessert is a great option for coeliacs, as the crumble is only made up of seeds and nuts. 

🍒Substitute any fruits that are in season eg stone fruit, rhubarb, cherries or other berries.

🍎 For a dairy free version, serve with dairy free ice cream or yoghurt.

🍐 My dish measured 20cm x 14cm.  This will be a perfect amount for 2 large servings or 4 small servings.

🍓 If catering for more people, simply double or triple the recipe to fit the size of the dish you are baking in.
