Ingredients

Mocha Dipping Sauce
  • 1 cup hot water
  • 1 tablespoon coffee granules
  • 1-2 tablespoons cocoa powder
  • 2 tablespoons caster sugar
  • 2 tablespoons Kahlua
  • 1 tablespoon Baileys
Filling
  • 250g mascarpone cheese
  • 300ml thickened cream
  • 1 teaspoon vanilla
  • ½ cup icing mixture
  • Barkers Luscious Strawberry Sauce ( I didn’t measure just drizzled on top of creamy filling)
  • 200g Di Leo Savoiardi sponge finger biscuits
  • 10-12 Strawberries (diced) for garnish

Instructions

Mocha Dipping Sauce
  1. In a bowl combine hot water, cocoa powder, coffee granules, sugar, Kahlua and Baileys. Stir until dissolved and allow to cool.
Filling
  1. In a large bowl add cream, vanilla and icing sugar and whip on high speed until soft peaks form. Add the mascarpone and beat on high speed until mixture thickens and stiff peaks form. Spoon into a piping bag or snap lock bag (this step is optional, you can spoon mascarpone cream into glasses if desired).
Assembling the dessert
  1. Cut sponge fingers to size to fit the glasses. Dip into the mocha sauce and place into the bottom of the glasses. Spoon or pipe mascarpone cream on top of the sponge biscuits. Drizzle strawberry topping on top of cream and continue layering up the glass. Finish with diced strawberries on top.
  2. Refrigerate 1-2 hours until set or overnight is best to deepen the flavours. Tiramisu will keep 2-3 days in the fridge.

Notes

  • You can make this into a large dessert by layering the dipped biscuits, cream and strawberry sauce x 2 and finish off with strawberries on top.
  • For a child friendly version, eliminate the coffee and alcohol.
  • For a traditional 'coffee' version, eliminate the cocoa powder
