This fun and easy recipe takes all the flavours you love from a classic burrito and rolls them up into golden tortilla scrolls, baked to perfection.

Ingredients
- 500g beef mince
- 1 packet taco seasoning mix
- 1 carrot, grated
- 1 zucchini, grated
- 1 cup grated cheese (cheddar or your favourite blend)
- 1 cup taco, enchilada or nacho sauce (whichever you have on hand)
- Large tortillas (you’ll need about 4–6 depending on size)
- Shredded iceberg lettuce
- Diced tomato or salsa
- Sour cream or Greek yoghurt
- Extra taco sauce or hot sauce
- Avocado or guacamole
- Baby spinach
- Pickled red onions
- Charred corn or corn kernels
Instructions
- Heat a large frying pan over high heat and brown the beef mince. Lower the heat to medium, then stir in the grated carrot and zucchini. Cook for 2–3 minutes until the veggies soften. Add the taco seasoning and ½ cup water, then simmer gently for 2 minutes until most of the liquid has evaporated. Set aside to cool slightly.
- Preheat oven to 160°C (fan-forced). Lightly grease a large baking dish (approx. 23 × 33cm / 9 × 13 inches).
- Place a tortilla on a chopping board and slice into 5 strips. Discard the two rounded outer edges, leaving 3 even strips. Spread each strip with a little taco or enchilada sauce. Spoon over some of the beef mixture, sprinkle with cheese, then roll each strip up tightly into a scroll.
- Stand the scrolls upright in the baking dish, cut side up. Repeat with remaining tortillas until the dish is full. Sprinkle over extra cheese.
- Bake for 20 minutes, or until the cheese is melted, golden and bubbling.
- Serve warm with your favourite toppings – think shredded lettuce, salsa, avocado, sour cream, charred corn, or pickled onions. Every bite is a fiesta! 🎉
