Anzac Slice

Anzac slice is a perfect twist on our favourite old classic Anzac biscuit. A simple slice that takes just a few minutes to prepare. It's a quick and easy treat. Perfect for lunchboxes or afternoon tea treats. If you like chewy Anzac biscuits, you are going to love this slice recipe, it is sure to become a family favourite.

Ingredients

  • 1 cup plain flour
  • 1 cup rolled oats
  • ¾ cup desiccated coconut
  • ¾ cup sugar (I used raw sugar, however you can also use caster, white or brown sugar)
  • 140g unsalted butter
  • 1 tablespoon golden syrup
  • 2 tablespoons boiling water
  • 1 teaspoon bicarbonate of soda

Instructions

  1. Preheat the oven 160ºC and line a slice tray with baking paper.
  2. Sift flour into a mixing bowl.
  3. Add rolled oats, coconut and sugar. Stir dry ingredients together.
  4. Melt butter and golden syrup in a small saucepan over medium low heat
  5. In a small bowl, mix together bicarb soda and boiling water. Add this to the butter mixture and stir well. The butter mixture will start to foam.
  6. Pour the foaming butter mixture into the dry ingredients and mix well.
  7. Pour the mixture into the prepared slice pan, spread out the mixture and using the back of a spoon, flatten the surface of the slice.
  8. Bake for 20-25 minutes or until golden on top.

Notes

  • Allow the slice to cool in the pan. 
  • I like to refrigerate my slice before cutting.
