Anzac Biscuit Cups

ANZAC Day, held on April 25th, is a day many of us pause to reflect and remember. Across Australia and New Zealand, it’s a time to honour those who served and in many homes, it’s also marked by the simple tradition of baking some Anzac biscuits to share. There’s something special about keeping that tradition going in our own kitchens each year, that feels meaningful.

Whether you prefer your Anzac biscuits crunchy or delightfully chewy, there’s no denying they’ve become a much-loved classic in Australian and New Zealand kitchens.

These Anzac Biscuit Cups are a fun, no-fuss twist on the traditional version. Instead of rolling individual biscuits, the mixture is simply pressed into a mini muffin pan, creating perfectly shaped bite-sized cups with golden edges and a soft, chewy centre.

Ideal for afternoon tea, lunchboxes or as a toddler-friendly snack, these Anzac Biscuit Cups are a must-try. If you love nostalgic baking, you might also enjoy my Anzac Slice recipe.

Made with pantry staples like oats, coconut and golden syrup, they deliver that same nostalgic flavour we all know and love… just with a quicker, less fiddly method that’s perfect for busy days or baking with kids.

Whether you like your Anzac biscuits soft and chewy or slightly crisp around the edges. This version gives you the best of both worlds, with that classic golden syrup flavour in every bite.

It’s one of those simple, comforting recipes I come back to again and again… and one that never lasts long once it hits the table.
