Choc Orange Cake
Ingredients
- 125g unsalted butter, softened
- ¼ cup milk
- ¼ cup orange juice
- 2 eggs
- ¾ cup caster sugar
- 1 ½ cups self-raising flour, sifted
- 1 tablespoon orange zest
- ⅓ cup butter, softened
- 1 ½ -2 cups icing mixture, sifted
- 2 tablespoon orange juice, strained
- 1 teaspoon milk
- 1 tablespoon cocoa powder
Instructions
- Preheat oven 160ºC and grease and line a loaf tin.
- Combine all ingredients into a large mixing bowl and beat on low speed until all ingredients are combined, then beat on high speed for 3 minutes.
- Pour mixture into your prepared loaf tin. Bake in the oven for 30-40 minutes. Keep an eye on the cake. Loaf tins vary in size, so your cake may need a little extra time depending on the size of the tin. Cake is cooked when it springs back when lightly pressed in the centre and when a cake tester comes out clean.
- Allow the cake to cool in the cake tin.
- Remove cake from tin and place on serving plate. Spread icing over the cooled cake.
- Sift icing sugar and cocoa into a medium bowl.
- Add butter, milk and orange juice. Mix together on medium speed until smooth.
Notes
If you prefer the icing to not have a chocolate flavouring but would prefer an orange icing, you can omit the cocoa powder and add 1 teaspoon orange zest.
