Choc Orange Cake

You will enjoy this lovely soft, moist orange cake topped with a delicious chocolate frosting. Perfect as an after school treat. Or even better to take along to wow your friends or family at your next gathering.

Ingredients

Orange Cake
  • 125g unsalted butter, softened
  • ¼ cup milk
  • ¼ cup orange juice
  • 2 eggs
  • ¾ cup caster sugar
  • 1 ½ cups self-raising flour, sifted
  • 1 tablespoon orange zest
Chocolate Frosting
  • ⅓ cup butter, softened
  • 1 ½ -2 cups icing mixture, sifted
  • 2 tablespoon orange juice, strained
  • 1 teaspoon milk
  • 1 tablespoon cocoa powder

Instructions

Orange Cake
  1. Preheat oven 160ºC and grease and line a loaf tin.
  2. Combine all ingredients into a large mixing bowl and beat on low speed until all ingredients are combined, then beat on high speed for 3 minutes.
  3. Pour mixture into your prepared loaf tin. Bake in the oven for 30-40 minutes. Keep an eye on the cake. Loaf tins vary in size, so your cake may need a little extra time depending on the size of the tin. Cake is cooked when it springs back when lightly pressed in the centre and when a cake tester comes out clean.
  4. Allow the cake to cool in the cake tin.
  5. Remove cake from tin and place on serving plate. Spread icing over the cooled cake.
Chocolate Frosting
  1. Sift icing sugar and cocoa into a medium bowl.
  2. Add butter, milk and orange juice. Mix together on medium speed until smooth.

Notes

If you prefer the icing to not have a chocolate flavouring but would prefer an orange icing, you can omit the cocoa powder and add 1 teaspoon orange zest.
