Apple Cinnamon Muffins

These apple cinnamon muffins are deliciously full of warm cinnamon and pops of apple that gives you a nice flavour burst when you bite into it. Finishing off the muffin with a sprinkle of cinnamon sugar makes this the perfect afternoon treat that can be enjoyed anytime.

Ingredients

  • 3 Granny Smith apples, peeled and finely diced
  • 2 cups SR flour
  • ½ cup brown sugar
  • 1 teaspoon baking powder
  • Pinch salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup buttermilk
  • ⅓ cup grape seed oil/canola oil
  • 2 eggs
  • 1 teaspoon vanilla
  • Cinnamon sugar to sprinkle on top of the muffins

Instructions

  1. Preheat your oven 160°C and line a muffin pan with liners
  2. In a large bowl, sift flour, baking powder, salt, cinnamon and nutmeg. Add the sugar and stir until well combined.
  3. In a jug, whisk together the buttermilk, oil, eggs and vanilla.
  4. Pour the wet ingredients into the dry ingredients along with the grated apple and gently stir until combined. Be careful not to overmix.
  5. Spoon batter into the muffin cases.
  6. Sprinkle cinnamon sugar over the muffin batter in the cases.
  7. Place the muffin tray in the oven for 15-20 minutes.
  8. Allow to cool for a few minutes in the tray before serving.

Notes

  • If you are lucky enough to have access to the Gewurzhaus spice range, use 1 tablespoon of their ‘Apple Pie Blend’ instead of the cinnamon and nutmeg.  Gewurzhaus is a lovely German spice shop based in Melbourne, Australia.  You can purchase their range online. This would replace the cinnamon and nutmeg in the muffin mix as well as the cinnamon in the cinnamon sugar if you are making your own.
  • If you don’t have cinnamon sugar you can make your own by mixing together 2 tablespoons of caster/brown sugar and 1 teaspoon cinnamon.
  • If you don’t have any buttermilk, pour 1 cup of milk into a jug and stir through 1 teaspoon vinegar. You will need to make this up in step 1 and let sit whilst you prepare the rest of the ingredients.
