This easy-to-make recipe is sure to be a crowd-pleaser.   In honour of Mother’s day this week, I am sharing with you my Mum’s favourite slice she likes to share, which is loved by all.   This one-bowl slice is sure to impress your mum this Mother’s day. Turn a simple home brand cake mix into a sensational slice, which is ideal for morning tea or dessert and anything in between.

Apple Sour Cream Slice

Apples are in season, so let’s showcase their beauty in this delightful treat, Apple Sour Cream Slice! This easy-to-make recipe is sure to be a crowd-pleaser. This one-bowl slice is sure to impress your mum this Mother’s day. Turn a simple home brand cake mix into a sensational slice, which is ideal for morning tea or dessert and anything in between.

Ingredients

  • 340g pack homebrand butter cake mix
  • ¾ cup desiccated coconut
  • 125g melted butter
  • 1 teaspoon vanilla
  • 2 apples (you could also use a 400g can pie apples)
  • 250g sour cream
  • 2 eggs
  • 1 tablespoon caster sugar
  • 1 teaspoon vanilla
  • Cinnamon sugar to dust on top

Instructions

  1. Preheat the oven 160ºC and line a slice tray with baking paper.
  2. In a bowl, mix together the cake mix, coconut, melted butter and vanilla.
  3. Press into your prepared slice tray and smooth over the top. Bake in the oven for 15 minutes
  4. Peel and core the apples. Cut in half from top to bottom and slice thinly (roughly 0.5cm or less)
  5. When the slice base has cooked, place the apple pieces over the base. These can be slightly overlapping.
  6. In a medium sized bowl, whisk together the sour cream, eggs, vanilla and caster sugar until smooth.
  7. Pour over the apples and gently smooth out with the back of a spoon or spatula.
  8. Cook in the oven for 15 minutes or until the top has set.
  9. When cooked, immediately sprinkle cinnamon sugar over the top of the slice. Allow the slice to cool completely. Once cooled, place in the fridge to set, overnight is best.
  10. Then cut into serving pieces

Notes

  • You can use any apples you have at home in this recipe
  • You can substitute the apples for a 400g can pie apples if you wish
