Bircher Muesli
A quick and easy breakfast that only takes 5 minutes to prepare. What more could you want?Made from wholesome oats, apple, yogurt, seeds and almonds, this simple bircher muesli recipe can easily be made the night before, making it a perfect healthy breakfast for busy mornings the whole family will love.

Ingredients
- 1 cup rolled oats
- ½ cup apple juice (or water)
- 1 cup yoghurt (your choice vanilla, greek, natural, coconut etc)
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg (optional)
- 1 teaspoon vanilla
- 1 cup trail mix or ½ cup seeds/nuts (I prefer to use slivered almonds, pepitas, sunflower seeds & flax seeds)
- 1 apple, grated
Instructions
- In a large bowl combine oats, apple juice/water, yoghurt, cinnamon, nutmeg, vanilla, seed/nut mix and grated apple.
- Cover with a lid/glad wrap and leave in the fridge for 1-2 hours or overnight.
- Scoop the amount needed into a bowl, top with diced fruit, a spoon of yoghurt and some granola as desired.
Notes
Serving suggestions:
- Fresh berries, diced mango, pineapple or papaya (depending on the season).
- Stewed apples or pears are also nice to serve with bircher muesli, particularly in Autumn
- Granola
- To serve as a breakfast parfait layer with bircher muesli, yoghurt, granola and fruit.
