This easy Bircher Muesli takes just five minutes to prepare and makes the perfect healthy breakfast for busy mornings. It’s made with simple, wholesome ingredients like oats, apple, yoghurt, seeds and almonds.  Everything you need for a nourishing start to the day.

You can make it the night before and that’s why I love recipes like this.  They make mornings feel calm and organised (even when they’re not). Whether you top it with fresh seasonal fruit, a dollop of yoghurt or a sprinkle of granola, it’s a breakfast you’ll actually look forward to.

Bircher Muesli

A quick and easy breakfast that only takes 5 minutes to prepare. What more could you want?Made from wholesome oats, apple, yogurt, seeds and almonds, this simple bircher muesli recipe can easily be made the night before, making it a perfect healthy breakfast for busy mornings the whole family will love.

Ingredients

  • 1 cup rolled oats
  • ½ cup apple juice (or water)
  • 1 cup yoghurt (your choice vanilla, greek, natural, coconut etc)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1 teaspoon vanilla
  • 1 cup trail mix or ½ cup seeds/nuts (I prefer to use slivered almonds, pepitas, sunflower seeds & flax seeds)
  • 1 apple, grated

Instructions

  1. In a large bowl combine oats, apple juice/water, yoghurt, cinnamon, nutmeg, vanilla, seed/nut mix and grated apple.
  2. Cover with a lid/glad wrap and leave in the fridge for 1-2 hours or overnight.
  3. Scoop the amount needed into a bowl, top with diced fruit, a spoon of yoghurt and some granola as desired.

Notes

Serving suggestions:

  • Fresh berries, diced mango, pineapple or papaya (depending on the season).
  • Stewed apples or pears are also nice to serve with bircher muesli, particularly in Autumn
  • Granola
  • To serve as a breakfast parfait layer with bircher muesli, yoghurt, granola and fruit.
