Cheats Paella

The best thing is, it’s so easy to make, even on a weeknight! Simply start cooking my Cheat’s Paella on the stove and finish it off in the oven. The vibrant flavours of this one pot wonder will be sure to have you going back for more.

Cheats Paella

Ingredients
- 1 ½ cups medium grain rice
- 1 tablespoon oil
- 8 chicken thigh fillers, cubed
- 2 chorizo - diced
- 1 red onion, diced
- ½ red capsicum, diced
- 6 garlic cloves, crushed
- 3 cups chicken stock
- 2 teaspoons paprika
- ½ teaspoon turmeric
- ¾ cup frozen peas
- ¾ cup frozen corn kernels
Instructions
- Preheat the oven 180ºC. Heat an ovenproof frypan over medium heat. Swirl the oil to coat the bottom of the pan.
- Fry the chicken for 3-5 minutes. You just need to seal the chicken pieces, they don’t need to be fully cooked. Remove to a clean plate and set aside.
- Add the chorizo and cook for 2-3 minutes. Remove to a clean plate and set aside.
- Cook the onion and garlic for 2 minutes.
- Add the capsicum and cook for an extra 2 minutes.
- Return the chorizo to the frypan and stir.
- Add the rice and stir through
- Add the spices and stir for 1 minute.
- Pour in the chicken stock and gently stir to combine.
- Gently return the chicken to the pan and stir through.
- Bring to the boil. Place the lid on the frypan and put in the oven for 15 minutes.
- Remove the frypan from the oven. Take off the lid. Sprinkle the frozen peas and corn over the top and gently stir through. Place the lid back on the frypan and put it back in the oven for 5 more minutes.
- Take the frypan out of the oven and let stand for 5 minutes and serve.
