Creamy Chia Porridge

There's nothing quite like wrapping your hands around a warm bowl of porridge on a cold winter morning. It's one of those simple breakfasts that feels like a comforting warm hug from the very first spoonful.

I wanted to make my regular bowl of porridge a little more nourishing, so I started adding chia seeds, flaxseed meal and hemp seeds. They boost the fibre, plant-based protein and healthy fats, making this a breakfast that helps keep you feeling fuller for longer. It's such an easy way to add a little extra goodness to a breakfast I was already making almost every morning.

The best part is that it takes less than five minutes to make in the microwave, making it perfect for busy weekdays as well as slow weekend mornings. Finish it with your favourite fruit, a drizzle of honey or maple syrup, a sprinkle of nuts or a spoonful of yoghurt for an easy breakfast you'll look forward to all winter long.

Flaxseed meal – Adds extra fibre, healthy fats and a subtle nutty flavour.

Ground cinnamon – Adds warmth and natural sweetness.

Top Tips

  • Use a large bowl: Porridge can bubble up while cooking, so using a larger bowl helps prevent spills.  I find a 2L bowl is best.

  • Adjust the consistency: If your porridge is thicker than you'd like, simply stir through an extra splash of milk before serving. Or cook for a further 30 seconds if too runny.

  • Sweeten to taste: Add honey, maple syrup or raw sugar after cooking if you prefer a sweeter breakfast.

  • Mix up the toppings: Fresh berries, banana, grated apple, pear, nuts or yoghurt all work beautifully.

Variations

  • Stir through a spoonful of peanut butter or almond butter for extra flavour and protein.

  • Add ¼ cup desiccated coconut for a delicious coconut twist.

  • Top with toasted coconut flakes, chopped walnuts, pecans or sliced almonds for added crunch.

  • Swap the cinnamon for mixed spice, pumpkin spice or Christmas spice for a different flavour.

  • Change up the fruit toppings with banana, grated apple, pear, fresh berries or stewed fruit depending on the season.

Storage

This porridge is best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days.

Reheat in the microwave with a splash of milk, stirring until smooth and creamy.

Frequently Asked Questions

Can I use rolled oats instead of quick oats?

Yes. Rolled oats work well, but they'll need an extra minute or two in the microwave and will give the porridge a slightly heartier texture. If you prefer a smoother, creamier porridge, quick oats are the better choice.

Can I make this dairy free?

Absolutely. Simply use your favourite plant-based milk.

Can I make this on the stovetop?

Yes. Combine all the ingredients in a small saucepan and cook over medium-low heat, stirring regularly, until thick and creamy.

Is chia seed porridge healthy?

This porridge contains oats, chia seeds, flaxseed meal and hemp seeds, providing fibre, plant-based protein and healthy fats. It's a wholesome, satisfying breakfast that can help keep you feeling full throughout the morning as part of a balanced diet.
