Individual Plum Puddings

My individual plum puddings are the perfect twist on an old classic festive dessert. Light and fluffy plum puddings will be the star of your dessert table this Christmas. It only takes 4 simple steps to create these super easy, oven baked plum puddings for Christmas Day.

Ingredients

  • 500g mixed fruit
  • 1 teaspoon bi-carb soda
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon mixed spice
  • 440g can crushed pineapple, drained
  • 125g unsalted butter
  • 2 tablespoons Pedro Ximénez sherry (optional)
  • 1 cup water
  • 1 cup brown sugar
  • 2 eggs, lightly beaten
  • 1 ½ cups Self Raising flour

Instructions

  1. Preheat the oven to 150ºC and Grease 2 muffin trays.
  2. In a medium sized saucepan put mixed fruit, bi-carb soda, cinnamon, nutmeg, mixed spice, pineapple, butter, sherry, water and sugar. Stir occasionally over medium low heat and bring to the boil for 3 minutes. Remove from the heat and allow to cool in the saucepan.
  3. Add eggs and sifted flour. Stir until well incorporated.
  4. Divide the mixture evenly among the muffin holes.
  5. Place muffin trays in the oven and cook for 18-20 minutes. Puddings are cooked when they spring back when lightly touched in the centre. If you need extra time, add 1-2 minutes. Allow to cool in the muffin trays.
  6. Serve warm with custard or vanilla ice cream.

Notes

If you are lucky enough to have access to the Gewurzhaus spice range, use 1 tablespoon of their ‘Christmas Cake and Pudding Spice’ instead of the cinnamon, nutmeg and mixed spice.  Gewurzhaus is a lovely German spice shop based in Melbourne, Australia.  You can purchase their range online.
