Pistachio and Cranberry Bliss Balls

Christmas time is a time for indulging, but that doesn’t mean you have to always have chocolate right?? You have got to try my healthy pistachio and cranberry bliss balls. They are the perfect alternative to the traditional White Christmas. Packed with the goodness of cashews and oats with festive pistachios and cranberries and a little pop of zesty orange. The ideal treat to make for loved ones or to add to the Christmas cheese board.

Ingredients

  • 1 cup cashews or blanched almonds
  • ½ cup rolled oats
  • ⅓ cup coconut
  • 2 tablespoons maple syrup or rice malt syrup
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla
  • Pinch salt
  • ½ cup pistachios
  • ½ cup cranberries
  • Zest of ½ - 1 orange
  • ½ teaspoon cinnamon
  • Extra coconut to sprinkle or roll in

Instructions

  1. Place the cashews, coconut and rolled oats into the food processor and blitz until crumbs just form. Do not over blitz!
  2. Add maple syrup, coconut oil, vanilla and salt. Pulse to combine.
  3. Add orange zest, cinnamon, pistachios and cranberries and pulse until the cranberries and pistachios are lightly chopped.
  4. Roll tablespoon sized balls of mixture and roll in extra coconut if desired. Store in the fridge.
