Pistachio and Cranberry Bliss Balls
Ingredients
- 1 cup cashews or blanched almonds
- ½ cup rolled oats
- ⅓ cup coconut
- 2 tablespoons maple syrup or rice malt syrup
- 2 tablespoons coconut oil
- 1 teaspoon vanilla
- Pinch salt
- ½ cup pistachios
- ½ cup cranberries
- Zest of ½ - 1 orange
- ½ teaspoon cinnamon
- Extra coconut to sprinkle or roll in
Instructions
- Place the cashews, coconut and rolled oats into the food processor and blitz until crumbs just form. Do not over blitz!
- Add maple syrup, coconut oil, vanilla and salt. Pulse to combine.
- Add orange zest, cinnamon, pistachios and cranberries and pulse until the cranberries and pistachios are lightly chopped.
- Roll tablespoon sized balls of mixture and roll in extra coconut if desired. Store in the fridge.
