Ingredients

  • 1 ⅓ cups icing mixture
  • ½ cup plain flour
  • ¼ teaspoon baking powder
  • 1 cup almond meal
  • 2 teaspoons finely grated lemon rind
  • 150g unsalted butter, melted and cooled
  • 1 teaspoon vanilla
  • 4 egg whites, lightly whisked at room temperature
  • 120g frozen blueberries
  • 40g white chocolate chips

Instructions

  1. Preheat the oven 160’C and line a slice tin (18cm x 28cm) with baking paper allowing an overhang to allow easy removal.
  2. Sift icing mixture, flour and baking powder into a large bowl.
  3. Add lemon zest and almond meal and mix together.
  4. Pour the melted butter, vanilla and egg whites. Gently stir until just combined.
  5. Pour into the prepared slice tin and sprinkle evenly with the blueberries and white chocolate chips.
  6. Bake for 30 minutes or until lightly golden on top or if it springs back when lightly touched in the centre.
  7. Allow the slice to cool in the tin.
  8. When cool, carefully place the slice onto a chopping board and cut the slice into squares or rectangles and dust lightly with icing mixture.

Notes

  • Slice will keep fresh for 1 week if stored in a sealed container in the fridge.
  • Slice can be served warm if you gently heat it in the microwave for 10 seconds.
