Mini NYC Easter Cookies
These Mini Egg NYC Cookies are thick, gooey and packed with chocolate chips and M&M Speckled Eggs! A must-bake for Easter, they’re crispy outside, chewy inside, and best of all—no chilling required!
Ingredients
- 100g (½ cup) brown sugar
- 60g (¼ cup) caster sugar
- 100g unsalted butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 300g (2 cups) plain flour
- 1 teaspoon baking powder
- ½ teaspoon bicarbonate of soda
- Pinch of salt
- 100g (½ cup) chocolate chips
- 130g bag M&M speckled eggs, roughly crushed
- 50g milk chocolate melts, melted
- Extra M&M speckled eggs for decoration
Instructions
- Preheat the oven to 160ºC and line 2 baking trays with baking paper
- In a large mixing bowl, mix together the brown sugar, caster sugar and butter until smooth.
- Stir in the egg and vanilla until well combined.
- Sift in the plain flour, baking powder, bicarbonate of soda, and salt, then fold into the wet ingredients.
- Stir through the chocolate chips and speckled eggs.
- Scoop 1-tablespoon-sized dough balls onto the baking trays, spacing them apart. Lightly press down on the tops.
- Bake for 10-12 minutes or until lightly golden. Allow to cool on the tray.
- Spoon a small blob of melted chocolate onto each cookie and press 2-3 speckled eggs into the centre.
- Place the tray in the fridge to set the chocolate.
