What Are LCM Bars?
LCM Bars are a popular Australian snack made with crispy puffed rice cereal held together with a sweet, chewy marshmallow mixture.
This homemade version (also known as Marshmallow Bubble Slice) gives you that same crispy, chewy texture using just a few simple supermarket ingredients.
Top Tips
Work quickly. Once the melted marshmallow mixture hits the Rice Bubbles, it starts setting fairly quickly, so have everything ready to go.
Don’t use too much pressure. Press the mixture firmly enough to hold together, but avoid really compacting it or your bars can become too hard and dense.
Add the M&Ms last. Pressing them over the top rather than stirring them through the warm marshmallow mixture helps prevent the colours from running.
Use baking paper. A sheet of baking paper over the top makes it much easier to gently press the mixture evenly into the tin without it sticking to your hands.
Variations
There are plenty of ways to have a little fun with these bars. Try mini M&Ms, colourful sprinkles, choc chips or a drizzle of melted chocolate over the top.
For birthday parties, you can also cut the slice into bite-sized squares rather than traditional bars.
Storage
Store Homemade LCM Bars in an airtight container at room temperature. Keep them somewhere cool and away from direct sunlight so the chocolate doesn’t melt.
For lunchboxes, you can cut the slice into individual bars and store them ready to grab and go during the week.
Frequently Asked Questions
Can I make LCM Bars ahead of time?
Absolutely. They’re a great make-ahead lunchbox treat and can be prepared in advance and stored in an airtight container.
Why are my homemade LCM Bars hard?
This can happen if the marshmallow mixture is heated for too long or if the Rice Bubble mixture is packed too firmly into the tin. Melt the marshmallows gently over low heat and press the mixture into the tin without compacting it too much.
Can kids help make these?
Definitely! Once an adult has taken care of melting the marshmallows, kids can help stir, press the mixture into the tin and, of course, add the M&Ms.
Can I make these without M&Ms?
Yes. Leave them plain or decorate with sprinkles, mini choc chips or a drizzle of melted chocolate instead.
