Easy Sprinkle Shortbread Biscuits made with 5 simple ingredients. A quick, no-fail shortbread recipe perfect for kids’ baking, parties, lunchboxes and homemade treats.

Ingredients

  • 250g unsalted butter, softened
  • ½ cup (80g) icing sugar mixture
  • 1 tsp vanilla paste (or extract)
  • 2 cups (300g) plain flour
  • ⅓ cup (60g) rice flour
  • ¼ cup sprinkles or 30 freckles, crushed

Instructions

  1. Preheat the oven to 160°C fan-forced. Line two baking trays with baking paper.
  2. In a large bowl, beat butter, icing sugar and vanilla with electric beaters for 3-5 minutes until pale and fluffy.
  3. Sift over plain flour and rice flour. Mix on low speed until just combined into a soft dough. Do not overmix.
  4. Place sprinkles or crushed freckles into a small bowl.
  5. Roll heaped teaspoon-sized portions into balls, dip the tops into sprinkles and place onto trays. Lightly press to flatten.
  6. Bake for 12–15 minutes, until the edges are just lightly golden.
  7. Cool completely on trays before transferring to a container.
