Nut-Free Chocolate Bliss Balls

Ingredients

  • 8 dates
  • 1 cup coconut
  • 1 tablespoon coconut oil
  • 1 tablespoon Rice Malt Syrup
  • 1 tablespoon Chia seeds
  • 1 teaspoon vanilla
  • ¼ cup sunflower seeds
  • ¼ cup pepitas
  • ½ cup oats
  • 2 tablespoons cacao/cocoa powder
  • ½ cup coconut to roll in

Instructions

  1. Slice the dates in half and remove any seeds.
  2. Place the dates in a food processor along with the coconut, coconut oil, rice malt syrup, chia seeds, vanilla, sunflower seeds, pepitas, oats and cocoa powder.
  3. Blitz the mixture until well combined. The mixture should stick together when pressed in your hands.
  4. Take 1 tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture.
  5. Roll each ball in desiccated coconut to coat.

Notes

  • Store the bliss balls in an airtight container in the fridge.
  • Bliss balls freeze beautifully, so I love making a couple of batches on the weekend to have a stash ready for grab-and-go snacks or a sweet treat in the lunchbox.
