Nut-Free Chocolate Bliss Balls
Ingredients
- 8 dates
- 1 cup coconut
- 1 tablespoon coconut oil
- 1 tablespoon Rice Malt Syrup
- 1 tablespoon Chia seeds
- 1 teaspoon vanilla
- ¼ cup sunflower seeds
- ¼ cup pepitas
- ½ cup oats
- 2 tablespoons cacao/cocoa powder
- ½ cup coconut to roll in
Instructions
- Slice the dates in half and remove any seeds.
- Place the dates in a food processor along with the coconut, coconut oil, rice malt syrup, chia seeds, vanilla, sunflower seeds, pepitas, oats and cocoa powder.
- Blitz the mixture until well combined. The mixture should stick together when pressed in your hands.
- Take 1 tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture.
- Roll each ball in desiccated coconut to coat.
Notes
- Store the bliss balls in an airtight container in the fridge.
- Bliss balls freeze beautifully, so I love making a couple of batches on the weekend to have a stash ready for grab-and-go snacks or a sweet treat in the lunchbox.
