Mini Puff Pastry Rosemary Potato Pizzas

These Mini Puff Pastry Potato & Rosemary Pizzas are quick, easy and packed with flavour. Made with puff pastry, sliced potato, rosemary and cheese, they bake in just 5–7 minutes. Perfect for parties, snacks, lunchboxes or easy entertaining.

Ingredients

  • 2 sheets puff pastry, thawed
  • 2 brushed potatoes, thinly sliced (about 5mm)
  • Garlic dip (store-bought or homemade)
  • 1 tablespoon fresh rosemary, roughly chopped
  • Salt and freshly cracked pepper
  • Grated cheese (optional – mozzarella, tasty or parmesan work well)

Instructions

Prepare the Pastry & Toppings
  1. Defrost the puff pastry on the bench.
  2. Using a 7cm cookie cutter, cut 9 circles from each pastry sheet.
  3. Lay the pastry circles onto baking paper (9 per sheet).
  4. Thinly slice the potatoes to less than 5mm thick.
  5. Spread 1 teaspoon of garlic dip over each pastry circle.
  6. Top each circle with one potato slice, a sprinkle of rosemary, salt and pepper and grated cheese.
Method 1: Pizza Stone (Extra Crispy Base)
  1. Place the pizza stone into the oven and preheat to 220°C whilst you prepare your pizzas.
  2. Slide the baking paper with the prepared pastry circles onto a pizza paddle, then carefully onto the hot pizza stone.
  3. Bake for 5–7 minutes, keeping a close eye on them, until puffed and golden.
  4. Remove from the oven and allow to cool for a few minutes before serving.
  5. Repeat with the remaining pastry circles.
Method 2: Baking Tray
  1. Line two baking trays with baking paper and assemble the pizzas directly on the lined trays.
  2. Place trays into the oven and bake at 220°C for 5–7 minutes, until puffed and golden.
  3. Remove from the oven and allow to cool slightly before serving.
  4. Repeat with the remaining pastry circles if needed.

Notes

  • You can make a large pizza by following the instructions above and cook for 7-10 minutes or until the pizza is puffed and golden.
  • Every oven can have a different level of heat. Your pizzas should be golden and puffy. If you think your pizzas need extra cooking, cook for 1 minute extra and check to see how they are cooking. Adjust your times as necessary.
