Ingredients

  • 1-2 tablespoons olive oil
  • 1 onion, diced
  • 5 garlic cloves, crushed
  • 500g Pork Veal Mince
  • 1 zucchini, grated
  • 1 carrot, grated
  • 1 celery stalk, grated
  • 1 tablespoon Italian herbs
  • 2 teaspoons dried basil
  • 2 tablespoons tomato paste
  • 1 800ml bottle passata sauce
  • 2 cups chicken stock
  • 1 ½ cups macaroni, uncooked

Instructions

  1. Heat a large pot over low heat and drizzle in the olive oil.
  2. Add the onion and garlic, stirring occasionally for 5 minutes until softened.
  3. Increase the heat to high, add the mince and cook until browned.
  4. Reduce heat to medium, add the grated vegetables and stir to combine.
  5. Stir in the Italian herbs, dried basil, and tomato paste.
  6. Pour in the passata and chicken stock, then add the macaroni and stir.
  7. Bring to a boil, then reduce to a simmer. Cook, stirring occasionally, for 10–15 minutes until the macaroni is tender and the sauce has thickened.
  8. Be careful—macaroni can stick to the bottom of the pot, so stir regularly!
  9. Serve topped with grated cheese and enjoy with a side salad or garlic bread.

Notes

Tips & Variations

Switch up the protein – Swap pork & veal mince for beef, turkey or chicken mince.

Make it extra saucy – Add an extra ½ cup of stock if you like a thinner sauce.

Spice it up – A pinch of chili flakes adds a nice kick!

Boost the veggies – Stir in baby spinach, mushrooms or capsicum for more nutrients.

Make it creamy – Stir in a splash of cream or a dollop of ricotta at the end for extra richness.
