We all love a good old no-bake recipe and this sweet treat is the kind of recipe you can throw together in minutes using ingredients already sitting in the pantry.

These Peanut Bubble Bites were inspired by my love of the classic Mars Bar Slice. I wanted to create a version with a peanut butter twist using ingredients I already had on hand.

The combination of peanut butter, chocolate and Rice Bubbles is always a winner in our house and these little bites never seem to last long once they're made.

I always love having a batch tucked away in the fridge. They're perfect for school holidays, after-school snacks or those moments when everyone is suddenly looking for something sweet.

Ingredient Notes

Peanut Butter
You can use either smooth or crunchy peanut butter depending on your preference.

Rice Malt Syrup
Adds sweetness while helping bind the mixture together.

Cinnamon
Adds a subtle warmth that complements the peanut butter beautifully.

Vanilla Extract
Enhances the overall flavour.

Rice Bubbles
Provide the classic light, crispy crunch.

Chocolate Melts

How to Make Peanut Bubble Bites

  1. Combine the peanut butter, rice malt syrup, cinnamon and vanilla in a small saucepan over low heat. Stir until smooth and warmed through.

  2. Remove from the heat and add the Rice Bubbles. Stir until evenly coated.

  3. Spoon the mixture into silicone mini muffin pans and press firmly into shape.

  4. Melt the chocolate and spoon a small amount over each bite.

  5. Refrigerate for approximately 1 hour or until firm.

  6. Remove from the moulds and serve.

Peanut Bubble Bites

Peanut Bubble Bites - a tasty twist on the classic Mars Bar slice!  Imagine the perfect combination of peanut butter and chocolate, infused with the playful chewy crunch of Rice Bubbles. This irresistible treat will surely make everyone in the family happy, they even make a great school holiday treat as well!

Ingredients

  • ½ cup peanut butter
  • ½ cup rice malt syrup
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla (or 1/2 teaspoon vanilla bean paste)
  • 2 cups Rice Bubbles (or Rice Puffs)
  • 100g milk or dark chocolate melts

Instructions

  1. In a small saucepan, measure out the peanut butter, rice malt syrup, cinnamon and vanilla.
  2. Place the saucepan on the stove over low heat and stir until the mixture is just smooth.
  3. Pour the Rice Bubbles into the peanut mixture and stir until well combined.
  4. Press the mixture into silicone mini muffin pans (or you could use a lined square cake tin).
  5. Put the chocolate in a microwave safe bowl and melt on 50% heat for 1 minute, stir. Continue at 30 second intervals as needed.
  6. Dollop half a teaspoon of chocolate over the top of each Peanut Bubble Bite and smooth over. (If using a cake tin, spread the chocolate using the back of a spoon or a spatula)
  7. Place in the fridge to chill for about 1 hour or until set.

Notes

  • Best kept in the fridge until serving
  • You can use any type of peanut butter you like. I prefer to use Mayver's Smunchy Protein Peanut Butter.
