Smartie Cookies

Quick, easy and colourful! These homemade Smartie Cookies are soft, chewy and ready in under 30 minutes. Perfect for kids’ lunchboxes, after-school snacks or birthday parties.

Ingredients

  • 125g unsalted butter, softened
  • ½ cup caster sugar
  • 1 egg, lightly beaten
  • 1 tsp vanilla extract or paste
  • 1 ¼ cups self-raising flour
  • ½ cup Smarties (plus extra for topping if desired)

Instructions

  1. Preheat the oven to 160ºC fan-forced and line 2 baking trays with baking paper.
  2. In a bowl, cream butter and sugar with electric beaters on high speed until light and fluffy.
  3. Add vanilla and egg, mixing well on medium speed until combined.
  4. Sift in the flour and mix on low speed until a soft dough forms.
  5. Roll heaped teaspoonfuls of dough into balls and place on trays, leaving room for spreading. Lightly flatten the centres.
  6. Press 3 Smarties gently into each dough ball.
  7. Bake for 10–12 minutes or until the edges are lightly golden.
  8. Allow to cool on trays for 5 minutes before transferring to a wire rack.

Notes

Top Tips:

  • Swap Smarties for M&Ms, choc chips or even freckles for fun twists.
  • Make them extra colourful by adding rainbow sprinkles into the dough.
  • For soft cookies, bake on the shorter side; for crispier edges, bake longer.
  • Get the kids involved in decorating, it’s the best part!
  • Store in an airtight container in the fridge for up to 1 week or freeze for up to 3 months.
