Fruity, creamy and ready in no time! Made with just four simple ingredients, this dairy-free sorbet blends frozen raspberries, egg white, sugar and vanilla into the dreamiest, light-as-air texture. Perfect for hot days, quick desserts or when you need something sweet in a hurry!

I love using a mix of frozen berries, mango or even dragon fruit. That bright pink colour makes it so fun and inviting! Serve it straight away for a soft texture or freeze it for an easy-to-scoop, ice-cream-style dessert.

Sweet Raspberry Sorbet

Ingredients

  • 150g frozen raspberries
  • 1 egg white
  • 50g caster sugar
  • 1 teaspoon vanilla extract
  • 1-2 teaspoons lime or lemon juice (optional)

Instructions

  1. Place the frozen raspberries, egg white, sugar/maple syrup and lime or lemon juice (if using) into a high-speed blender.
  2. Blend on high until smooth and fluffy, scraping down the sides as needed to ensure everything is fully combined.
  3. Serve immediately.

Notes

  • Serve immediately for a soft, creamy texture or transfer to a sealed container and freeze if making ahead.
  • Get creative with frozen fruit combos! Other options include: mango, dragon fruit, blueberries, strawberries, mixed berries
