Ingredients

  • ¼ red onion, finely diced
  • 1 small bunch coriander, stems and leaves finely chopped
  • 1–2 ripe avocados
  • Juice of ½ lime
  • Pinch of salt and pepper
  • 1 tomato, deseeded and finely diced

Instructions

  1. Cut the avocado(s) in half, remove the seed, and scoop out the flesh onto a clean chopping board. Roughly chop, then mash with the back of a fork until you reach your desired texture.
