Chocolate Cherry Slice

There’s something so comforting about old-fashioned slice recipes.  They’re the ones our mums and grandmas used to make, the ones we’d sneak from the tin when no one was looking. This Chocolate Cherry Slice is my little twist on that classic chocolate coconut slice we all grew up with.

It’s everything you love about the original - fudgy, chocolatey and chewy with plenty of coconut.  But the glace cherries take it to another level, adding little bursts of sweetness in every bite. Best of all, it only takes 10 minutes to mix together with a few pantry staples, so you can have it baking in the oven before the kettle has even boiled.

Once cooled and topped with smooth chocolate icing, it’s a slice that feels just as at home in the school lunchbox as it does on a weekend afternoon tea spread. One bite and you’ll be instantly transported back to your childhood, only with a delicious little cherry twist.

Chocolate Cherry Slice

This Chocolate Cherry Slice is an easy twist on the classic chocolate coconut slice, packed with chewy glace cherries and topped with smooth chocolate icing. Quick to make with just a few pantry staples!

Ingredients

Chocolate Cherry Base
  • 1 cup (150g) plain flour
  • ½ cup (75g) self-raising flour
  • 2 tbsp cocoa powder
  • ⅔ cup (150g) caster sugar
  • 1 cup (90g) desiccated coconut
  • 125g glace cherries, roughly chopped
  • 200g butter, melted
  • 1 tsp vanilla extract
Chocolate Icing
  • 2 cups (320g) icing sugar mixture
  • 2 tbsp cocoa powder
  • 60g butter, softened
  • 2 tbsp boiling water
  • 1 tsp vanilla extract

Instructions

Chocolate Cherry Base
  1. Preheat oven to 160°C (fan-forced) and line a 28x18cm slice tray with baking paper.
  2. Sift plain flour, self-raising flour, and cocoa into a large mixing bowl. Stir in caster sugar, coconut, and glace cherries.
  3. Pour in melted butter and vanilla, stirring until well combined. The mixture will be thick but should hold together when pressed.
  4. Press evenly into the prepared tray and smooth the top with the back of a spoon. Bake for 20–25 minutes or until just set.
  5. Allow slice to cool slightly in the pan — it should still be a little warm when icing.
Chocolate Icing
  1. Sift icing sugar and cocoa into a bowl. Add softened butter, boiling water, and vanilla. Stir until smooth and glossy.
  2. Spread icing evenly over the warm slice.
  3. Set in the fridge until firm before slicing into squares.

Notes

Top Tips:

  • Extra Fudgy: Add 50g dark chocolate (melted) to the butter mixture for a richer base.
  • Nutty Twist: Swap half the cherries for chopped walnuts or almonds.
  • Gluten-Free: Replace flours with a gluten-free plain flour blend and add ½ tsp baking powder.
  • Storage: Store in an airtight container in the fridge for up to 5 days, or freeze un-iced slice for up to 2 months.
