Christmas Rocky Road Slice

It's the most wonderful time of the year. Feast your eyes on my Christmas Rocky Road slice. It is a combination of a fudgy chocolate biscuit base and your old favourite rocky road toppings. Christmas rocky road slice is enjoyed by all - young and old - and is the perfect addition for any Christmas baking this festive season.

Ingredients

  • 100g milk chocolate melts
  • 1 teaspoon vanilla
  • Pinch salt
  • 1 tin 395g condensed milk
  • 1 packet of Arnott’s Chocolate Ripple Biscuits
  • 200g milk chocolate melts (extra)
  • ½ cup roasted almonds, roughly chopped
  • ½ cup mini marshmallows
  • ½ cup red and green M&MS
  • ½ cup raspberry jelly lollies, cut into 1cm pieces
  • ¼ cup Jaffa's

Instructions

  1. In a small saucepan, melt the chocolate melts, vanilla, salt, and condensed milk over low heat, stirring occasionally until smooth. Remove from heat and allow to cool, stirring occasionally to prevent a skin from forming on top.
  2. Blitz the biscuits in a food processor until they form fine crumbs.
  3. Pour the biscuit crumbs into a bowl and add the melted chocolate mixture. Stir until fully combined.
  4. Spread the mixture evenly into a lined slice tray. Using wet hands, press it firmly into the tray, ensuring it reaches the corners.
  5. Melt the additional chocolate melts in the microwave on medium heat for 1 minute. Stir, then continue melting in 30-second intervals, stirring between each, until just melted. Pour over the slice base and spread evenly.
  6. Sprinkle the toppings over the melted chocolate and lightly press them into the surface with your hands.
  7. Place the tray in the fridge to set overnight.
  8. Before serving, remove the slice from the fridge and let it sit at room temperature for about 10 minutes before cutting into pieces.
  9. For clean cuts: Dip a sharp knife into hot water and dry with a clean tea towel before slicing. Repeat with each slice for a smooth finish.

Notes

  • If you don't have a food processor, place the biscuits into a large snap lock bag and crush with a rolling pin.
  • The easiest way to chop the red lollies with with a pair of kitchen scissors
