Turkish Delight Rocky Road

A quick, easy, and festive no-bake rocky road recipe with Turkish Delight, marshmallows, roasted almonds and milk chocolate. Perfect for gifting or dessert tables.

Ingredients

  • 4 x 55g Cadbury Fry’s Turkish Delight bars
  • 1 x 280g packet marshmallows
  • 1 cup roasted almonds
  • 2 x 290g packets milk chocolate melts
  • 1 tablespoon (30g) copha or coconut oil

Instructions

  1. Line a slice tray (approx. 20x30cm) with baking paper and set aside.
  2. Roughly chop almonds. Use kitchen scissors to halve the marshmallows. Chop Turkish Delight into bite-sized pieces.
  3. Place chocolate and copha in a large microwave-safe bowl. Melt in 30-second bursts on medium power, stirring between each, until smooth and glossy.
  4. Add almonds, marshmallows and Turkish Delight to the melted chocolate. Mix quickly to coat everything evenly.
  5. Pour the mixture into the prepared tray, spreading evenly. Tap lightly on the bench to release any air bubbles.
  6. Refrigerate for 30 minutes or until set. Allow to sit at room temperature for 5-10 minutes before slicing.
  7. Cut into neat squares. Package in cellophane bags with festive ribbon for a beautiful homemade gift!
