Crispy & Chewy Anzac Biscuits
Classic Anzac biscuits with crispy edges and a soft chewy centre. Simple ingredients, easy method and perfect every time.
Ingredients
- 1 cup plain flour
- 1 cup rolled oats
- ¾ cup desiccated coconut
- ¾ cup caster sugar
- 140g unsalted butter
- 1 tablespoon golden syrup
- 2 tablespoons boiling water
- 1 teaspoon bicarbonate of soda
Instructions
- Preheat the oven to 160°C and line 2 baking trays with baking paper.
- In a large bowl, sift flour. Add oats, coconut and sugar. Stir to combine.
- In a small saucepan, melt butter and golden syrup over low heat.
- In a separate bowl, mix boiling water with bicarbonate of soda. Add to butter mixture (it will foam).
- Pour wet mixture into dry ingredients and mix until combined.
- Roll heaped teaspoons into balls and place on trays, leaving space to spread.
- Gently flatten slightly.
- Bake for 10-12 minutes or until golden.
- Cool on trays for 5 minutes, then transfer to a wire rack. Repeat with the rest of the mixture.
