Fennel and Rocket Salad
Ingredients
- A few handfuls of rocket leaves (you could also use baby spinach or any other salad leaves or a combo of all!)
- 1 fennel, thinly sliced
- 2 cloves garlic, crushed
- 2-3 tablespoons extra virgin olive oil
- Juice of ½ lemon
- Salt and pepper
Instructions
- Put salad leaves into a salad bowl and top with thinly sliced fennel. Toss together and set aside.
- In a small glass jar, pour in the lemon juice, olive oil, garlic, salt and pepper. Put on the lid and shake to combine.
- Pour as much or as little of the dressing as you like onto the fennel salad.
- Serve immediately.
