Fennel and Rocket Salad

This fennel and rocket salad is a lovely light tangy salad that pairs beautifully with seafood or chicken. The dressing can be made a day ahead and stored in the fridge. Simply pour over the fennel and rocket when ready to serve.

Ingredients

  • A few handfuls of rocket leaves (you could also use baby spinach or any other salad leaves or a combo of all!)
  • 1 fennel, thinly sliced
  • 2 cloves garlic, crushed
  • 2-3 tablespoons extra virgin olive oil
  • Juice of ½ lemon
  • Salt and pepper

Instructions

  1. Put salad leaves into a salad bowl and top with thinly sliced fennel. Toss together and set aside.
  2. In a small glass jar, pour in the lemon juice, olive oil, garlic, salt and pepper. Put on the lid and shake to combine.
  3. Pour as much or as little of the dressing as you like onto the fennel salad.
  4. Serve immediately.
