Ingredients

  • 150g unsalted butter, softened
  • 180g dark chocolate
  • 1 teaspoon vanilla
  • Pinch salt
  • 280g (1 ¼ cup) caster sugar
  • 3 eggs
  • 30g (¼ cup) cocoa powder
  • 120g (¾ cup) plain flour
  • 1 cup chocolate chips (I like to use a combination of white and milk chocolate)
  • Optional:
  • Icing mixture for dusting

Instructions

  1. Preheat the oven to 160ºC Fan Forced. Line a 16 x 26cm slice pan with non-stick baking paper, allowing the sides to overhang for easy removal.
  2. In a microwave-safe bowl, combine the butter and chocolate. Microwave for 30-40 second, stirring until melted and smooth. Add the vanilla and salt, whisking to combine.
  3. Whisk in the caster sugar until fully incorporated.
  4. Add the eggs, 1 at a time, whisking until the mixture is smooth and glossy.
  5. Sift the flour, cocoa powder over the wet ingredients. Whisk until smooth and well combined. Fold in the chocolate chips.
  6. Pour the brownie batter into the prepared pan. Bake for 20-25 minutes for a slice pan, or until a skewer inserted in the centre comes out with moist crumbs clinging.
  7. Set aside to cool completely.
  8. Optional: Dust with sifted icing mixture if desired.

Notes

For best results, chill the brownies for a few hours or overnight before cutting into serving pieces. This will give you sharper lines when cutting.
