Ingredients

Chicken
  • 1kg boneless chicken thigh fillets
  • ¼ cup cornflour
  • Salt and pepper, to taste
  • 1-2 tablespoons cooking oil (vegetable, canola or avocado oil)
  • 1 tablespoon unsalted butter
Honey Garlic Sauce
  • ⅓ cup soy sauce
  • ⅓ cup honey
  • 4 garlic cloves, crushed
  • 1 tablespoon white rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
Cornflour Slurry
  • 1 tablespoon cornflour
  • 2 tablespoons water

Instructions

  1. Cut each chicken thigh fillet in half. Season generously with salt and pepper, then toss with the cornflour until lightly coated.
  2. Heat 1-2 tablespoons of oil in a large frying pan over medium-high heat. Cook the chicken for 4-5 minutes on each side or until golden and cooked through. Cook in batches if needed to avoid overcrowding the pan. Transfer the chicken to a plate.
  3. While the chicken is cooking, whisk together the soy sauce, honey, garlic, white rice vinegar, brown sugar and sesame oil in a small jug until well combined.
  4. Reduce the heat to medium. Melt the butter in the same frying pan, then pour in the sauce mixture. Bring to a gentle simmer.
  5. In a small bowl, stir together the cornflour and water until smooth. Slowly pour the slurry into the simmering sauce, stirring continuously. Cook for 1-2 minutes or until the sauce thickens into a glossy glaze.
