Satay Chicken Tenders
Ingredients
- 1kg chicken tenderloins
- 400g can coconut milk
- ¼ cup brown sugar
- 3 tablespoons soy sauce (light or salt-reduced)
- 2 tablespoons Keen’s Traditional Curry Powder
- 1 teaspoon turmeric
- ¾ cup peanut butter (crunchy or smooth)
- 300ml coconut milk (extra for the sauce)
- 1 lime, juiced
Instructions
- In a large glass or ceramic dish, combine coconut milk, brown sugar, 2 tablespoon soy sauce, curry powder and turmeric. Add the chicken tenderloins and stir to coat. Cover and place in the fridge for a few hours or overnight if time permits.
- Drain the chicken, reserving the marinade. Add the reserved marinade to a small saucepan along with the peanut butter, 1 tablespoon soy sauce and the extra coconut milk. Bring to the boil over medium heat. Reduce heat to low, cook for 5 minutes, stirring often until the sauce thickens.
- Preheat a frypan/barbecue/grill plate on medium high. Cook a few minutes on each side until cooked through. Serve with rice and vegetables of your choice.
