Satay Chicken Tenders

Ingredients

  • 1kg chicken tenderloins
  • 400g can coconut milk
  • ¼ cup brown sugar
  • 3 tablespoons soy sauce (light or salt-reduced)
  • 2 tablespoons Keen’s Traditional Curry Powder
  • 1 teaspoon turmeric
  • ¾ cup peanut butter (crunchy or smooth)
  • 300ml coconut milk (extra for the sauce)
  • 1 lime, juiced

Instructions

Marinade
  1. In a large glass or ceramic dish, combine coconut milk, brown sugar, 2 tablespoon soy sauce, curry powder and turmeric. Add the chicken tenderloins and stir to coat. Cover and place in the fridge for a few hours or overnight if time permits.
Sauce
  1. Drain the chicken, reserving the marinade. Add the reserved marinade to a small saucepan along with the peanut butter, 1 tablespoon soy sauce and the extra coconut milk. Bring to the boil over medium heat. Reduce heat to low, cook for 5 minutes, stirring often until the sauce thickens.
Chicken
  1. Preheat a frypan/barbecue/grill plate on medium high. Cook a few minutes on each side until cooked through. Serve with rice and vegetables of your choice.
