Ingredients

  • 2-2 ½ cups frozen mango cubes
  • ½ - 1 cup coconut milk

Instructions

  1. Place the frozen mango and ½ cup chilled coconut milk into a blender or food processor.
  2. Blend until the mixture is smooth and creamy.
  3. Check the texture - if it’s too thick, add more coconut milk, one tablespoon at a time, until you reach your desired consistency.
  4. Serve immediately for a soft-serve texture, or transfer the mixture to a container and freeze for 1–2 hours for a firmer, scoopable sorbet.

Notes

  • Start with ½ cup of coconut milk and gradually add more as needed for blending.
  • Fresh mango works just as well—simply freeze the cubes ahead of time.
  • For a twist, try a mix of frozen and fresh mango cubes for added texture.
  • Transform this sorbet into a smoothie bowl by topping with fresh fruit like banana slices, strawberries, raspberries, or blueberries, as well as granola or chia seeds.
