Mango Sorbet
Ingredients
- 2-2 ½ cups frozen mango cubes
- ½ - 1 cup coconut milk
Instructions
- Place the frozen mango and ½ cup chilled coconut milk into a blender or food processor.
- Blend until the mixture is smooth and creamy.
- Check the texture - if it’s too thick, add more coconut milk, one tablespoon at a time, until you reach your desired consistency.
- Serve immediately for a soft-serve texture, or transfer the mixture to a container and freeze for 1–2 hours for a firmer, scoopable sorbet.
Notes
- Start with ½ cup of coconut milk and gradually add more as needed for blending.
- Fresh mango works just as well—simply freeze the cubes ahead of time.
- For a twist, try a mix of frozen and fresh mango cubes for added texture.
- Transform this sorbet into a smoothie bowl by topping with fresh fruit like banana slices, strawberries, raspberries, or blueberries, as well as granola or chia seeds.
