Feel like something sweet without spending ages in the kitchen? These microwave cinnamon apples have those warm apple pie flavours we all know and love, with just a handful of everyday ingredients and a few minutes in the microwave. They’re a great way to use up those apples that keep coming home in the lunchboxes… just wait until you smell them cooking!

We love them served with homemade crêpes, with the buttery cinnamon sauce spooned over the top. Add a scoop of vanilla yoghurt or ice cream and you’ve got a café-style breakfast without having to change out of your pyjamas or spend a fortune!

Soft, juicy and full of cinnamon flavour, they’re just as delicious with pancakes or spooned over porridge. Serve with a crumble topping for a simple dessert, use them as a pastry filling or enjoy them warm straight from the bowl.

Ingredients

  • 2 large apples, cored, peeled and thinly sliced
  • 2 teaspoons sugar (raw, caster, white or brown)
  • 2 teaspoons ground cinnamon
  • 2 teaspoons unsalted butter
  • 2 tablespoons water

Instructions

  1. Place the apples, sugar, cinnamon, butter and water in a medium microwave-safe bowl. Stir to combine.
  2. Microwave on high for 2 minutes, then stir.
  3. Microwave for a further 2-3 minutes, or until the apples have softened to your liking.
  4. Stir gently and serve warm, spooning over the buttery cinnamon sauce.

Notes

Top Tips:

  • Keep the slices even. Thin, evenly sliced apples will cook more consistently. Thicker slices will need a little longer.
  • Adjust to your taste. Use a little less sugar if your apples are already sweet, or reduce the cinnamon if you prefer a milder flavour.
  • Check as you go. Microwave power varies, so stir after the first 2 minutes and check again after a further 1½ minutes. Continue in 30-second bursts if needed.
  • Save that sauce! Give everything a gentle stir before serving and spoon the buttery cinnamon sauce over your apples, crêpes or pancakes.
