Ingredients

Slice base
  • 250g Arnott’s Arrowroot or Marie Biscuits
  • 1 cup coconut
  • 2 limes (rind only)
  • 2-3 teaspoons finely chopped mint leaves
  • ½ cup sweetened condensed milk
  • 125g butter
Icing
  • 2 ½ cups icing sugar
  • 20g butter, softened and cut into cubes
  • 1 lime juiced
  • 2 tablespoons coconut
  • 1 teaspoon mint leaves finely chopped
  • 1 lime (rind only)

Instructions

Slice Base
  1. Line a slice pan (17 x 27 cm) with baking paper.
  2. Crush biscuits in a food processor. Add lime rind and mint leaves along with the coconut and pulse 2-3 times to combine.
  3. In a small saucepan add the butter and condensed milk. Heat on medium-low until the butter has melted. Stir to combine. Add to the biscuit mixture and pulse to ensure dry and wet ingredients are mixed well.
  4. Press into a slice tray using the back of a spoon to flatten the surface. Place in the fridge whilst you make the icing.
icing
  1. In a small bowl, combine coconut, mint leaves, and lime rind. Set aside.
  2. Sift icing sugar into a medium bowl. Add lime juice, butter, and a splash of milk. Stir until smooth and creamy, adjusting with more icing sugar or milk as needed for desired consistency.
  3. Spread the icing evenly over the chilled base, smoothing with the back of a spoon.
  4. Sprinkle the coconut, mint, and lime mixture over the icing.
