Rocket Crispy Noodle Salad
Ingredients
- ½ Wombok cabbage, finely shredded
- 6 shallots (green onions) finely sliced
- 1 carrot, grated (optional)
- 120g bag rocket leaves
- ¼ - ½ cup slivered almonds, lightly toasted
- 1 packet Chang’s Original Fried Noodles
- ¼ cup white vinegar
- ¼ cup caster sugar
- 1 tablespoon soy sauce
- 2 teaspoons sesame oil
- ½ cup olive oil
Instructions
- In a large salad bowl, combine the shredded wombok cabbage, sliced shallots, grated carrot (if using) and rocket leaves.
- In a small bowl or jar, whisk together the white vinegar, caster sugar, soy sauce, sesame oil, and olive oil until well combined.
- Just before serving, sprinkle with the almonds and fried noodles (reserving a handful of each for garnishing). Pour the dressing over the salad and toss gently to coat everything evenly.
- Sprinkle the reserved fried noodles and slivered almonds over the top for added crunch and presentation.
- Pair with chicken, seafood, or barbecued meats for a complete meal.
