Ingredients

Rocket Crispy Noodle Salad
  • ½ Wombok cabbage, finely shredded
  • 6 shallots (green onions) finely sliced
  • 1 carrot, grated (optional)
  • 120g bag rocket leaves
  • ¼ - ½ cup slivered almonds, lightly toasted
  • 1 packet Chang’s Original Fried Noodles
Dressing
  • ¼ cup white vinegar
  • ¼ cup caster sugar
  • 1 tablespoon soy sauce
  • 2 teaspoons sesame oil
  • ½ cup olive oil

Instructions

  1. In a large salad bowl, combine the shredded wombok cabbage, sliced shallots, grated carrot (if using) and rocket leaves.
  2. In a small bowl or jar, whisk together the white vinegar, caster sugar, soy sauce, sesame oil, and olive oil until well combined.
  3. Just before serving, sprinkle with the almonds and fried noodles (reserving a handful of each for garnishing). Pour the dressing over the salad and toss gently to coat everything evenly.
  4. Sprinkle the reserved fried noodles and slivered almonds over the top for added crunch and presentation.
  5. Pair with chicken, seafood, or barbecued meats for a complete meal.
