Pancake Roll Ups (Roll-Up Pancakes)

Easy Pancake Roll Ups made with fluffy crepe-style pancakes and simple fillings. Perfect for kids’ breakfasts, brunch and special occasions.

Ingredients

  • 1 cup self-raising flour
  • 2 tbsp caster sugar
  • Pinch of salt
  • 1 ¼ cups milk
  • 50g unsalted butter, melted (plus extra for greasing)
  • 1 large egg
  • 1 tsp vanilla extract
  • To Serve (optional):
  • Butter, icing sugar, maple syrup, Nutella, berries, yoghurt, jam, whipped cream, honey, lemon juice, vanilla ice cream

Instructions

  1. Sift flour into a medium bowl. Whisk in the sugar and salt.
  2. In a jug, whisk milk, egg and vanilla. Make a well in the dry ingredients and pour in the wet mixture and melted butter. Whisk gently until just combined (don’t overmix).
  3. Heat a non-stick frypan over medium heat and lightly grease with butter.
  4. Pour about ½ cup batter into the pan (or use a ladel), swirling slightly to spread. Cook for 1½ minutes until bubbles appear and the bottom is golden. Flip and cook for 30 seconds. Transfer to a plate. Repeat with remaining batter.
  5. While warm, spread pancakes with butter and dust with icing sugar. Add your favourite toppings, roll up tightly and serve with dipping sauces.

  • Don’t overmix: Whisk until just combined to keep pancakes soft and fluffy.
  • Low & slow heat: Cook on medium heat to prevent burning and keep pancakes flexible for rolling.
