Pancake Roll Ups (Roll-Up Pancakes)
Easy Pancake Roll Ups made with fluffy crepe-style pancakes and simple fillings. Perfect for kids’ breakfasts, brunch and special occasions.
Ingredients
- 1 cup self-raising flour
- 2 tbsp caster sugar
- Pinch of salt
- 1 ¼ cups milk
- 50g unsalted butter, melted (plus extra for greasing)
- 1 large egg
- 1 tsp vanilla extract
- To Serve (optional):
- Butter, icing sugar, maple syrup, Nutella, berries, yoghurt, jam, whipped cream, honey, lemon juice, vanilla ice cream
Instructions
- Sift flour into a medium bowl. Whisk in the sugar and salt.
- In a jug, whisk milk, egg and vanilla. Make a well in the dry ingredients and pour in the wet mixture and melted butter. Whisk gently until just combined (don’t overmix).
- Heat a non-stick frypan over medium heat and lightly grease with butter.
- Pour about ½ cup batter into the pan (or use a ladel), swirling slightly to spread. Cook for 1½ minutes until bubbles appear and the bottom is golden. Flip and cook for 30 seconds. Transfer to a plate. Repeat with remaining batter.
- While warm, spread pancakes with butter and dust with icing sugar. Add your favourite toppings, roll up tightly and serve with dipping sauces.
