Ingredients

  • 500g pizza flour (or 00 flour / strong bread flour)
  • 1 tsp salt
  • 1 tsp instant yeast
  • 300ml warm water
  • 1 tbsp olive oil
  • Extra flour, for dusting

Instructions

  1. In a large bowl, combine flour, yeast and salt.
  2. Add the olive oil to the warm water and gradually pour in the flour mixture, mixing until a sticky dough forms.
  3. Turn dough onto a lightly floured bench and knead for 8-10 minutes until smooth and elastic (or use a stand mixer with dough hook for 5-6 minutes).
  4. Place dough into a lightly oiled bowl, cover and rest in a warm spot for 1-2 hours until doubled in size.
  5. Preheat oven to 250°C (or highest setting) with pizza stone inside for at least 1 hour.
  6. Punch dough down, divide into 3-4 balls and roll into smooth rounds.
  7. Stretch dough into 10-inch bases on baking paper.
  8. Add sauce, cheese and toppings (keep toppings light).
  9. Slide onto hot pizza stone and bake 5-10 minutes until golden and bubbly.
  10. Rest for 1-2 minutes, slice and serve hot.
  11. NB: This dough makes 3 x dinner plate sized pizzas or 4 smaller pizzas

Notes

Top Tips:

  • Hot oven: Preheat your oven and pizza stone for 1 full hour for the best crispy base.
  • Light toppings: Too many toppings = soggy pizza. Less is more!
  • Extra crisp base: Dust pizza peel with semolina or flour before sliding onto the stone.
  • Chewy crust: Don’t overwork the dough when shaping – gentle stretching gives better texture.
  • Make ahead: Dough can be refrigerated overnight for extra flavour.
