Thai Red Curry Dumplings

There’s something so comforting about a bowl of Thai red curry.  That rich coconut sauce, the fragrant spices and just the right amount of heat. This recipe takes those classic flavours and pairs them with soft, pillowy dumplings for the ultimate easy dinner.

I first made this on a busy weeknight when I had a bag of frozen dumplings in the freezer and a craving for curry. It’s been on repeat ever since! The curry sauce is quick to make and the dumplings soak up all that coconutty, spicy goodness.

Perfect for when you want something a little special but still easy, this dish is ready in under 20 minutes. Serve it with a sprinkle of fresh chilli and kaffir lime leaves and you’ve got a dinner that feels like a treat but is simple enough for any night of the week.

Thai Red Curry Dumplings

A quick and comforting dinner, these Thai Red Curry Dumplings are ready in 20 minutes and packed with flavour.  The perfect weeknight meal.

Ingredients

  • ¼ cup Thai red curry paste (start with less if you prefer a mild curry)
  • 600 mL coconut milk
  • 1 tablespoon brown sugar or palm sugar
  • 1 tablespoon kaffir lime leaves, finely chopped
  • 2 tablespoons fish sauce
  • 1 x 750g frozen dumplings/gyozas (approx. 8 per serving)
  • 1 long red chilli, finely sliced (optional)

Instructions

  1. In a large saucepan over low heat, fry the curry paste with ½ cup of the coconut milk for 1-2 minutes, until fragrant.
  2. Pour in the remaining coconut milk and increase the heat to medium-low. Stir occasionally until the sauce comes to a gentle boil.
  3. Stir in the sugar, kaffir lime leaves and fish sauce. Simmer for 3 minutes to allow the flavours to develop. Add half the chilli, if using.
  4. Prepare the dumplings/gyozas according to the packet instructions.
  5. Spoon the hot curry sauce over the dumplings and garnish with extra chilli and kaffir lime leaves.

Notes

Top Tips:

  • Adjust the spice: Start with 1 tablespoon of curry paste if you prefer a mild curry, then increase to taste next time.
  • Any dumplings work: Pork, chicken, vegetable or prawn dumplings are all delicious.  Use whatever you have in the freezer.
  • Make it a full meal: Serve with a side of stir-fried greens.
