These Vegetarian Pizza Puff Pastry Scrolls are an absolute must-try! Whether you need a quick and easy snack, a fun lunchbox filler, or a crowd-pleasing party treat, these golden pinwheels tick all the boxes.

Ingredients
- 2 sheets puff pastry, thawed
- 2 tbsp tomato sauce (or pizza sauce)
- 2 tbsp barbecue sauce
- 2 tsp Italian herbs
- 2 tsp garlic granules
- ½ cup olives, sliced
- 4 shallots (green onions), thinly sliced on the diagonal
- ½ red capsicum, diced
- ½ cup fresh basil leaves, thinly sliced
- 1-2 cups grated vegan cheese (or Colby or mozzarella cheese)
Instructions
- Preheat the oven to 200°C (400°F) and line two baking trays with baking paper.
- Lay out the puff pastry sheets and evenly spread the tomato and barbecue sauce over each, using the back of a spoon.
- Sprinkle over the Italian herbs and evenly distribute the olives, shallots, capsicum, and basil. Top with garlic granules.
- Generously sprinkle grated cheese over the top.
- Place the pastry onto a chopping board for easier handling.
- Carefully remove the plastic backing, then roll the pastry tightly from one edge to the other, using the sauce to help seal the edge.
- Once rolled, slice into 2cm pieces (you should get about 10 scrolls per sheet).
- Arrange the scrolls cut-side up on the prepared baking trays, leaving space between them. Bake for 10–15 minutes or until golden brown.
- Let the scrolls cool on the tray for 5 minutes before serving.
Notes
Make-Ahead Option
- Follow steps 1–5, then rewrap the roll in the plastic backing and store in an airtight container in the fridge. When ready to bake, slice and proceed with steps 1, 6–9.
