Cheat’s No-Bake Vanilla Slice

A quick and nostalgic no-bake vanilla slice made with creamy vanilla filling, crisp biscuits and sweet pink icing.

Ingredients

Slice
  • ½ packet Hup Seng Sugar Crackers
  • 600ml thickened cream
  • 300ml milk
  • 2 x sachets Aeroplane Jelly Vanilla Flavoured Dessert Mix
Icing
  • 1½ cups icing sugar mixture, sifted
  • 60g unsalted butter, melted
  • 1 tablespoon milk or cream
  • 1 tablespoon boiling water
  • Pink food colouring
  • Desiccated coconut, for decorating

Instructions

  1. Line a 17cm x 27cm slice tin with baking paper.
  2. Arrange a layer of biscuits over the base of the tin, trimming extra pieces to fit neatly along the edges.
  3. In a large mixing bowl, combine the cream, milk and vanilla dessert mix. Beat until thick and creamy.
  4. Spread the filling evenly over the biscuit base and smooth the top.
  5. Repeat the biscuit layer over the filling.
  6. To make the icing, combine the icing sugar, melted butter, milk and boiling water in a bowl. Stir until smooth and thick but pourable.
  7. Add pink food colouring until your desired colour is reached.
  8. Pour the icing over the top biscuit layer and spread gently to the edges.
  9. Sprinkle with desiccated coconut.
  10. Refrigerate for at least 2 hours or until firm.
  11. Lift from the tin using the baking paper, slice and serve.

Notes

TOP TIPS:

  • Chill the slice well before cutting to help the filling firm up and give cleaner layers.
  • Use a serrated steak knife and gentle sawing motion to stop the biscuit layers from cracking.
  • If your icing thickens too quickly, add extra hot water 1 teaspoon at a time until smooth again.
  • Make this the day before serving for an even softer, bakery-style texture.
