Ingredients

  • 1 tablespoon olive oil
  • 500g lamb mince
  • 2 teaspoons cumin
  • 2 teaspoons coriander
  • 2 teaspoons cinnamon
  • 2 teaspoons paprika
  • 2 tablespoons tomato paste
  • ½ cup water
  • Turkish bread (or any other pizza base)
  • Grated pizza cheese
  • ¼ cup pine nuts, toasted
  • Handful spinach leaves, shredded
  • 1 tablespoon shredded mint leaves (optional)
  • Marinated goats cheese/feta cheese
  • Hummus
  • Beetroot hummus
  • Garlic dip/tzatziki

Instructions

  1. Preheat the oven 200ºC and line a baking tray with baking paper.
  2. Heat oil in a frypan over medium-high heat. Add lamb mince and cook, stirring until the lamb changes colour.
  3. Add the spices and cook, stirring for 1 minute.
  4. Add the tomato paste and cook, stirring for 1 minute. Add the water and stir until the water evaporates. Place on a clean plate and allow to cool for 10-20 minutes.
  5. Cut the Turkish bread into serving pieces and cut in half. Lay open on a lined baking tray. Spread the Turkish bread with garlic dip and hummus.
  6. Add a little grated cheese then top with the spiced lamb mince. Sprinkle with toasted pine nuts, spinach and mint. Finish off with goats cheese, grated cheese and garlic dip.
  7. Alternatively, you can gently mix the cooled spiced mince, pine nuts, spinach, mint and goats cheese in a bowl before adding to the pizza bases. This can be prepared ahead of time.
  8. Bake in the oven for 5-6 minutes or until the cheese has melted.
  9. Just before serving, add hummus and beetroot hummus and cut into smaller serving pieces if desired.
  10. Enjoy
