Cheese & Bacon Cob Loaf

This cheese & bacon cob loaf is a classic Australian party dip made with cream cheese, bacon and sour cream, baked inside crusty bread until golden and bubbling.

Ingredients

  • 1 cob loaf
  • 1 tablespoon oil
  • 1 garlic clove, crushed
  • 1 onion, finely diced
  • 8 shortcut bacon rashers, chopped
  • 3 shallots (spring onions), finely chopped
  • 250g cream cheese, softened
  • ⅔ cup sour cream
  • ⅔ cup thickened cream
  • 1 ½ cups grated cheese
  • Salt and pepper, to taste
  • 1 baguette, sliced (optional)

Instructions

  1. Preheat oven to 180°C (160°C fan-forced). Line a large baking tray with baking paper.
  2. Cut the top off the cob loaf (about 5cm from edge) to create a lid. Scoop out the centre, leaving a 1.5cm thick shell. Cut bread pieces and lid into chunks for dipping.
  3. Heat oil in a frying pan over medium heat. Add onion, garlic and bacon. Cook for 5 minutes or until bacon is browned and onion softened. Remove from heat.
  4. Transfer mixture to a large bowl. Stir in shallots and cream cheese until combined.
  5. Add sour cream, thickened cream and 1 cup grated cheese. Mix well and season with salt and pepper.
  6. Place cob loaf on tray. Spoon mixture into the hollowed cob loaf. Sprinkle remaining cheese on top. Arrange bread pieces and baguette slices around it.
  7. Bake for 20–30 minutes or until golden and heated through.
  8. Top with extra shallots if desired and serve warm.

Notes

Top Tips:

  • Soften cream cheese: Let it sit at room temp for easier mixing and a smoother filling.
  • Don’t overbake: Bake until just golden - overcooking can dry out the dip.
  • Prep ahead: Make the filling earlier in the day, then assemble and bake when ready.
  • Extra crunch: Toast bread pieces separately for a crispier dipper.
