Cranberry Brie Bites

If there’s one festive appetiser I make on repeat every Christmas, it’s these Cranberry Brie Bites.

They’re incredibly easy to prepare, made with just five simple ingredients and ready in under 25 minutes - perfect for stress-free entertaining!

Crispy puff pastry is tucked into mini muffin pans and filled with creamy brie, sweet cranberry sauce and crunchy walnuts, creating golden little parcels that are impossible to resist.

With their festive red and green colours and oozy, melty centres, these Cranberry Brie Bites are the kind of party food that always disappears first, even when everyone swears they’re already full.

Cranberry Brie Bites

Easy Cranberry Brie Bites made with puff pastry, creamy brie and sweet cranberry sauce. A festive, crowd-pleasing appetiser perfect for Christmas entertaining.

Ingredients

  • 1 sheet puff pastry, thawed
  • Spray oil (if using metal pan)
  • Cranberry sauce
  • Brie cheese
  • ¼ cup walnuts, roughly chopped
  • Fresh thyme, rosemary or basil (optional)

Instructions

  1. Preheat oven to 220°C / 200°C fan-forced. Spray a 12-hole mini muffin pan with oil (silicone pans don’t need greasing).
  2. Cut puff pastry into 16 even squares (4 x 4). Gently press each square into the muffin pan holes.
  3. Cut brie into 2cm cubes. Place ½–1 teaspoon cranberry sauce and one cube of brie into each pastry case. Sprinkle with walnuts.
  4. Bake for 10–12 minutes, or until puffed, golden and bubbling.
  5. Rest for 2 minutes, then carefully transfer to a serving board. Garnish with fresh herbs if desired. Serve warm.

Notes

TOP TIPS:

Cold pastry is key: Keep puff pastry chilled for flakier layers.

Don’t overfill: A little cranberry goes a long way and prevents overflow.

Make ahead win: Assemble earlier in the day and bake just before serving.

Swap the nuts: Pecans or pistachios work beautifully if preferred.

Serve warm: These are at their absolute best straight from the oven.
