Easy prawn cocktail salad with homemade sauce, perfect for Christmas and summer BBQs.

Ingredients

  • 300ml thickened cream
  • ½ cup tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste
  • 2 kg cooked prawns, peeled and deveined
  • 1 cos or iceberg lettuce, finely shredded
  • 1 small bag baby spinach, finely shredded
  • Lemon wedges, to serve

Instructions

  1. In a jug, whisk together the cream, tomato sauce, Worcestershire sauce, lemon juice, salt and pepper until smooth and pourable.
  2. Optional thicker sauce: For a classic, fluffy prawn cocktail-style sauce, use a stick blender or electric whisk and beat until soft peaks form.
  3. Arrange the shredded lettuce and spinach on a large serving platter.
  4. Scatter the peeled prawns over the greens.
  5. Drizzle or dollop the cocktail sauce generously over the salad.
  6. Finish with lemon wedges and serve immediately.
