Ingredients
- 300ml thickened cream
- ½ cup tomato sauce
- 1 tablespoon Worcestershire sauce
- 2 tablespoons lemon juice
- Salt and pepper, to taste
- 2 kg cooked prawns, peeled and deveined
- 1 cos or iceberg lettuce, finely shredded
- 1 small bag baby spinach, finely shredded
- Lemon wedges, to serve
Instructions
- In a jug, whisk together the cream, tomato sauce, Worcestershire sauce, lemon juice, salt and pepper until smooth and pourable.
- Optional thicker sauce: For a classic, fluffy prawn cocktail-style sauce, use a stick blender or electric whisk and beat until soft peaks form.
- Arrange the shredded lettuce and spinach on a large serving platter.
- Scatter the peeled prawns over the greens.
- Drizzle or dollop the cocktail sauce generously over the salad.
- Finish with lemon wedges and serve immediately.
