These quick pickled red onions are tangy, slightly sweet and beautifully vibrant. The easiest way to level up tacos, burgers, salads and sandwiches. No fancy equipment, no long wait, just a simple fridge pickle that delivers big flavour every time.

Ingredients

  • 2 red onions, thinly sliced
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 cup white vinegar
  • 1 cup water

Instructions

  1. Thinly slice the red onions and place them into a sterilised jar.
  2. Sprinkle over the salt and sugar.
  3. In a small saucepan, bring the vinegar and water to the boil.
  4. Remove from heat and allow to cool for 5 minutes.
  5. Carefully pour the warm pickling liquid over the onions, ensuring they are fully submerged.
  6. Seal the jar and gently turn left and right until the salt and sugar dissolve.
  7. Cool to room temperature, then refrigerate.
  8. Storage: Will last up to 3-4 weeks in the fridge.
