Ingredients

Whipped Chantilly Cream
  • 300ml thickened cream (well chilled)
  • ¼ cup icing sugar
  • 1 teaspoon vanilla extract
Macaron Berry Wreath
  • 14–15 pre-made macarons
  • 1 punnet large strawberries
  • 1 punnet raspberries
  • 1 punnet blueberries
  • 1 punnet cherries
  • Icing sugar, to dust
  • 20cm paddle board or serving plate

Instructions

  1. In a chilled bowl, add cream, icing sugar and vanilla. Mix on low speed until combined, then increase to high speed and whip until stiff peaks form.
  2. Spoon the whipped cream into a piping bag fitted with a large star nozzle.
  3. Pipe a ring of cream around the edge of a flat serving plate or paddle board - this will secure the wreath.
  4. Pipe large stars evenly around the ring. These will hold the macarons in place.
  5. Place macarons onto the piped stars in clusters of 1, 2 or 3.
  6. Cut 4 large strawberries into halves or quarters. Dice remaining strawberries.
  7. Arrange strawberries, raspberries, blueberries and cherries around the macarons, filling gaps to create a full wreath shape.
  8. Cut a star from paper and place in the centre of the wreath.
  9. Lightly dust with icing sugar for a festive snow effect.
  10. Serve immediately for best results.
