My Chicken Pizzaiola recipe combines the best of pizza and chicken parmigiana, creating a mouth-watering dish that will quickly become a family favorite. Rich tomato sauce, tender chicken breasts, and gooey melted cheese come together in perfect harmony in this dish that's ready in just 30 minutes. Ingredients

  • 2 chicken breasts, butterflied in half
  • ½ cup tomato sugo or pasta sauce
  • 2 tablespoons tomato pizza sauce
  • 1–2 cups grated cheese
Toppings:
  • 5 garlic cloves, finely diced
  • ¼ red onion, finely diced
  • ¼–½ capsicum, finely diced
  • Handful of fresh basil, shredded
  • 1 slice ham, finely sliced (optional)
  • 4 button mushrooms, finely diced (optional)

Instructions

  1. Preheat the oven to 160°C and line a baking tray with baking paper.
  2. In a small bowl, mix together the passata and pizza sauce.
  3. Lay the butterflied chicken breasts on the lined tray and spoon the sauce over the top.
  4. Combine your chosen toppings in a small bowl, then sprinkle over the sauce. Top with grated cheese.
  5. Cover the tray with a layer of baking paper and foil and bake for 15 minutes.
  6. Remove the foil, then bake uncovered for 5–10 minutes until the cheese is golden brown.
  7. Serve with a fresh side salad and enjoy!
