Ingredients

Matchsticks
  • 2 sheets puff pastry
  • 300ml thickened cream
  • ¼ cup icing mixture
  • 1 teaspoon vanilla
  • Jam of choice (I prefer strawberry or raspberry)
  • Extra icing mixture to dust on top

Instructions

Pastry
  1. Preheat your oven to 200°C.
  2. Defrost the puff pastry until softened, then cut each sheet into 8 equal pieces.
  3. Place the pieces on a lined baking tray, cover with another piece of baking paper, and top with a second baking tray to prevent the pastry from puffing up too much. Bake for 10-12 minutes, then allow to cool on the tray. Repeat with the second sheet of pastry.
  4. Pastry must be cool before you can assemble the matchsticks.
Whipped Cream
  1. In a chilled bowl, combine the cream, vanilla, and icing mixture. Beat with electric beaters on high speed until stiff peaks form.
Assemble the Matchsticks
  1. Find a pair of pastry rectangles. One piece will be the top and one piece will be the bottom.
  2. Spread a layer of jam over the bottom piece of pastry, dollop the whipped cream over the jam, and gently place the top piece of pastry on top. Dust with extra icing mixture.
  3. Repeat with the leftover pieces of pastry.
  4. Serve immediately.

Notes

Time Saving Tips:

  • You can cook the pastry pieces the night before and store in a container. They will stay fresh and crispy ready when you need to serve them.
  • Whip the cream ahead of time and store in the fridge until you need it.


Flavourings:

  • You can use any flavoured jam you like, I prefer to use raspberry or strawberry.
  • You could even use Nutella and sliced strawberries with whipped cream for an added indulgence!
